Smarties Rocky Road – A Rainbow RECIPE

I’ve felt a little bit of a bad Mum over lockdown, as we actually haven’t done much baking and cooking. Hubby made some scones with the kids but when I’m at home with the crazy little man, it is so hard to start a task and stay on track! Even when he goes for a sleep, we are usually doing home-schooling and using that quiet time. My little boy is totally bonkers and interferes with anything. The amount of times we have started something and had to stop is crazy!  I have my eldest on my own one Tuesday a week now, as the little man is at his childminder and the middley is at nursery. So I promised her we would make some Rocky Road – even better we were going to make Smarties Rocky Road.

I had to admit I was pretty keen. Rocky Road is by far one of my favourite treats but I have never actually made it myself. I did wonder what it would turn out like to be honest.

I think for me, it’s the mixture of chocolate, marshmallows and biscuits; completely heavenly and so rich!

So my eldest and I had a go and my goodness she was so excited! She’s a complete chocoholic and was going mental licking the bowl.  I was surprised afterwards she waited until she stayed up that evening to have one with a cup of tea. I think it was more the lure of getting to stay up that kept her away.

Here how we made them! It was quite an easy one for us both.

Smarties Rocky Road – The Recipe

Ingredients

Of course I wasn’t 100% sure of a recipe myself so I have adapted one from Baking Mad . They have the addition of nuts and white chocolate and my eldest wasn’t too keen on the nuts. I wasn’t sure I could be bothered to drizzle white chocolate on top either. Yes, I’m a tad lazy.

We also wanted to add Smarties! Here are the ingredients.

– 125g of Unsalted Butter

– 150g of Dark Chocolate (Broken into Pieces)

– 150g of Milk Chocolate (Broken into Pieces)

– 3 tbsp of Golden Syrup

– 100g of Digestive Biscuits (Roughly Crushed)

– 100g of Smarties

– 100g of Mini Marshmallows

– Weighing Scales

– Mixing Bowls

– Saucepan

– Tin/Tray – lined with baking paper

– Baking Paper

– Spatula

– Mixing Spoon

Method

– In the saucepan slowly melt the butter, dark and milk chocolate and syrup. Do this very slowly and stir well, as you don’t want it to burn!

– Remove pan from the heat.

– Add in the Smarties, Digestive Biscuits and Marshmallows and mix in well.

– Pour the mixture into the lined tin/tray.

– I added a few rouge Smarties left in the packet on top.

– Chill in the fridge for at least 2 hours.

– Cut into pieces and voila!

We then put into a lunchbox and put in the fridge for storage.

I have to admit it was amazing! But very rich! I’ve seen huge slabs of Rocky Road in the shops and never been able to eat it all in one go, so hubby cut this into small pieces and it was enough. Even my eldest said she’d had enough with one and a cuppa that evening!

This recipe was easy, even for me. I’m Not a skilled chef at all and like to try things I know should come out ok and this was perfect. It would be great if you were making to take over to friends or into work for a celebration (if allowed right now!).

A delicious Rocky Road Recipe with Smarties

Equipment

  • Baking Tray/Tin
  • Saucepan
  • Mixing Bowls
  • Spatula
  • Mixing Spoon
  • Baking Paper

Ingredients
  

  • 125 g Unsalted Butter
  • 150 g Dark Chocolate Broken up
  • 150 g Milk Chocolate Broken up
  • 3 tbsp Golden Syrup
  • 100 g Smarties
  • 100 g Digestive Biscuits Roughly broken up
  • 100 g Mini Marshmallows

Instructions
 

  • Slowly melt the butter, dark and milk chocolate with the syrup. Careful not to burn and stir well
  • Remove from the heat
  • Add the Digestive biscuits, mini marshmallows and Smarties. Mix well. I added a few rouge Smarties to the top
  • Pour the mixture into your tray/tin lined with baking paper
  • Chill in the fridge for at least 2 hours
  • Cut into pieces and store in the fridge in a sealed container
