Vanilla White Chocolate Marshmallow Cupcakes

An easy cupcake recipe for kids and will help with their letters!

Ingredients
  

  • 120 g Unsalted Butter
  • 120 g Caster Sugar
  • 2 Eggs
  • 1 tsp Vanilla Essence
  • 120 g Self-raising Flour
  • 100 g White chocolate
  • Mini Marshmallows

Instructions
 

  • Pre-heat the over to 180 degrees or 160 (fan assisted).
  • Cream the caster sugar with the butter until smooth.
  • Add the eggs and vanilla essence to the mixture.
  • Fold in the flour. You may need a little milk if the consistency of the mixture won't drop into the cake cases.
  • Spoon the mixture into the cake cases, 3/4 full.
  • Cook for 10-15 minutes into the oven.
  • Leave to cool on a wire rack.
  • Melt the white chocolate in the microwave, being careful not to let it burn and stir well.
  • Dollop the white chocolate onto each cupcake and smooth with a spoon.
  • Decorate the top with mini marshmallows. You can do initials like we did!
