- Pre-heat the over to 180 degrees or 160 (fan assisted). 
- Cream the caster sugar with the butter until smooth. 
- Add the eggs and vanilla essence to the mixture. 
- Fold in the flour. You may need a little milk if the consistency of the mixture won't drop into the cake cases. 
- Spoon the mixture into the cake cases, 3/4 full. 
- Cook for 10-15 minutes into the oven. 
- Leave to cool on a wire rack. 
- Melt the white chocolate in the microwave, being careful not to let it burn and stir well. 
- Dollop the white chocolate onto each cupcake and smooth with a spoon. 
- Decorate the top with mini marshmallows. You can do initials like we did!
