Vanilla White Chocolate Marshmallow Cupcakes

An easy cupcake recipe for kids and will help with their letters!

Ingredients
  

  • 120 g Unsalted Butter
  • 120 g Caster Sugar
  • 2 Eggs
  • 1 tsp Vanilla Essence
  • 120 g Self-raising Flour
  • 100 g White chocolate
  • Mini Marshmallows

Equipment

  • Mixing Bowl
  • Scales
  • Hand Mixer
  • Bowls for ingredients
  • Wooden Spoon
  • Cupcake Tray
  • Cake Cases

Method
 

  1. Pre-heat the over to 180 degrees or 160 (fan assisted).
  2. Cream the caster sugar with the butter until smooth.
  3. Add the eggs and vanilla essence to the mixture.
  4. Fold in the flour. You may need a little milk if the consistency of the mixture won't drop into the cake cases.
  5. Spoon the mixture into the cake cases, 3/4 full.
  6. Cook for 10-15 minutes into the oven.
  7. Leave to cool on a wire rack.
  8. Melt the white chocolate in the microwave, being careful not to let it burn and stir well.
  9. Dollop the white chocolate onto each cupcake and smooth with a spoon.
  10. Decorate the top with mini marshmallows. You can do initials like we did!
