Vanilla White Chocolate Marshmallow Cupcakes – Easy Recipe for Kids

Since lockdown, my eldest and I have really started to enjoy baking. We have a Tuesday to ourselves, as my other two are with the childminder or at nursery. This makes life so much easier! I do find it hard with my baby boy running around, as he is a bit of a liability! I struggle to finish a task, as he has usually emptied the cupboards! Last week we really enjoyed making a Smarties Rocky Road. It was delicious and so easy for me to make with my eldest. This week she wanted to make cupcakes and we decided to try vanilla white chocolate marshmallow cupcakes.

This is quite huge for me as I am not a baker at all. Ok re-phrase this, according to my husband my baking is actually pretty good. I just don’t do it!

Hence why some of my ideas can be a bit rubbish. See below.

Now I do have to add my idea of writing an initial on each cupcake in marshmallows didn’t turn out as effective as I hoped. In fact it was a bit naff!! However, my eldest really enjoyed trying to make the initial of her name and it was worth it for that!

I mean, can you tell what initials we were trying to do?!

Vanilla White Chocolate Marshmallow Cupcakes – Ingredients

I’m not a master baker at all and with my previous recipe, I usually to try and adapt when it comes to baking. Why re-invent the wheel eh? Also knowing me, it will be a huge mess up! I’m still learning when it comes to baking.

We used a BBC Food recipe for Vanilla cupcakes but did our own thing when it came to the topping.

It says serves 6-12 and we found easily made 12 small cakes.

The ingredients were pretty simple:

For the Cakes

  • 120g of butter softened
  • 120g caster sugar (we ran out, so had to use a little granulated)
  • 2 eggs
  • 1 tsp of vanilla extract
  • 120g of self-raising flour

I also needed a splash of milk in the final mixture to make it easier to drop in the cupcake cases.

For the Topping

  • 100g of white chocolate
  • Mini Marshmallows

The Method

– Heat the oven to 180 degrees/160 fan assisted and put 12 cake cases in a muffin-tin

– Cream the butter and sugar together until you have a nice smooth mixture. We used a hand-mixer, rather than doing this by hand.

– Crack the 2 eggs into a cup or separate bowl and beat. Then add to the mixture, alongside the vanilla extract.

– Fold in the flour and this is where I needed a little more milk to make the consistency smoother.

– Spoon into the paper cases until they are 3/4 full. Make sure you stick to this, as in my past experiences I have over-filled and the cakes are huge!

– Bake in the oven for 10-15 minutes. Cool for 10 minutes and leave on a wire rack.

For the Topping

– Melt the white chocolate slowly in the microwave. Stir well and ensure it doesn’t burn.

– Spoon onto the top of your cupcakes and smooth over with the back of a spoon.

– Decorate the top with marshmallows. We did enjoy writing people’s initials on top with them!! Was good fun for my eldest daughter.

Equipment

  • Mixing Bowl
  • Scales
  • Hand Mixer
  • Bowls for ingredients
  • Wooden Spoon
  • Cupcake Tray
  • Cake Cases

Ingredients
  

  • 120 g Unsalted Butter
  • 120 g Caster Sugar
  • 2 Eggs
  • 1 tsp Vanilla Essence
  • 120 g Self-raising Flour
  • 100 g White chocolate
  • Mini Marshmallows

Instructions
 

  • Pre-heat the over to 180 degrees or 160 (fan assisted).
  • Cream the caster sugar with the butter until smooth.
  • Add the eggs and vanilla essence to the mixture.
  • Fold in the flour. You may need a little milk if the consistency of the mixture won't drop into the cake cases.
  • Spoon the mixture into the cake cases, 3/4 full.
  • Cook for 10-15 minutes into the oven.
  • Leave to cool on a wire rack.
  • Melt the white chocolate in the microwave, being careful not to let it burn and stir well.
  • Dollop the white chocolate onto each cupcake and smooth with a spoon.
  • Decorate the top with mini marshmallows. You can do initials like we did!

This really is an easy recipe for kids and I am hoping in time, one that my eldest may perhaps be able to do herself! You may decide not to use the marshmallows for initials but I reckon it doesn’t look too bad. Plus everyone said they were delicious!

    I love how you’ve personalised the cakes with the marshmallows. Such a sweet idea. My youngest son adores mini marshmallows so he’d love to give these a try!
