Vegetarian Recipes – Delicious, Easy and Family Friendly

I’ve always said I think I could be vegetarian. I like meat and fish don’t get me wrong but I could go without it for sure. I’ve spoken in the past about how I know I couldn’t be a vegan and it wouldn’t be something I could let my children do either. For us as a family, I know we couldn’t give up eggs and dairy; I have an egg a day and the girls love their Greek yoghurt and fromage frais. It is just a little restrictive for us. I wouldn’t want to have to supplement and worry about my children and the nutritional quality of their diet (even more!!) Vegetarian recipes are different however!

I’m not against having some vegan meals mind. As I write this, I have just finished my vegan sweet potato and lentil bolognaise and I recently published 10 vegan meal recipes, with help from my fellow bloggers. I definitely look for the vegan and vegetarian recipes when I am out to eat more now. They are delicious and sometimes it gives me the boost to try and cook more plant-based meals.

I decided to put together a post of easy vegetarian recipes from the blogging community. Many of these are quite family friendly, so perfect to try if you are aiming to eat a little less meat this 2020.

Baked Eggs – a Vegetarian Recipe

This is one of my recipes and one me and my husband love; baked eggs. With eggs, feta cheese and harissa spices, it is a perfect one to have for brunch. We serve it with Naan bread, mango chutney and I quite like a little yoghurt with it! Yum!

Vegetarian Bolognaise

Lyndsey from Me, Him, The Dog and a Baby has a vegetarian bolognaise recipe that not only looks delicious but is really good value at 60p a portion. Perfect for budgeting this January after a mad Christmas. I’ve just bought some vegetarian mince so be a good time to try this one.

Pasta and Green Sauce

Jenni from The Bear and The Fox has a very tasty pasta recipe that I think children will love, pasta and green sauce. I love the sound of the basil and I think little ones will like the creamy sauce. Served with broccoli, it’s a healthy, quick choice after school!

Vegetarian Pizza

My girls love a bit of pizza and I have to say I’m quite partial too! I do tend to have vegetarian options when I’m out and about. Sarah from Sarah Lou Writes has a fun recipe for a vegetarian pizza. It looked like a lot of fun and her kids got involved too!

Rainbow Pizza

As I mentioned, I love pizza and I love rainbows so this was a match made in heaven for me from Han-Son from daddilife. It is packed with vegetables and so colourful and the base is made from quinoa. I really want to make this one for just me! Definitely a good way to get your 5 a day in!

Vegetarian Black Pudding Sausage Rolls

We have tried to cut down on sausages in our house. We tend to have the chicken ones now or vegetarian. So I was intrigued to see what this vegetarian black pudding sausage rolls recipe would be like by Jane from Hodge Podge Days. They look really tasty and would be a good one for Christmas!

Slow Cooker Vegetarian Lasagne

We love our slow cooker, especially on the days when I have to go back to work and have a late finish. Hubby often shoves something in the slow cooker. This recipe for vegetarian lasagne for the slow cooker by Katy from Katykicker looks like a brilliant meat-free option for a busy day. It looks like is full with vegetables, so great for your 5 a day!

Greek Pasta

I adore any Greek food and we are off back to Rhodes next summer. I can’t wait! This Greek pasta recipe from Wendy from Daisies and Pie. It looks amazing and so healthy! Lots of Mediterranean colours and totally reminds of me something I would have when on holiday. I’m a huge fan of feta and olives.

Peanut Sauce

I was really intrigued by this Peanut Sauce recipe from Sophie from Life with Mrs D. I love anything with nuts and love a good satay sauce, so to make one for pasta? Really interesting one and looks like one to try. I think one for the kids and quick and easy to do.

Some really tasty looking vegetarian recipes from my talented blogger friends. It is often hard to get out of your comfort zone with cooking and I need some inspiration to try something new!

    Some great ideas here. That rainbow pizza looks ace and even though I am not a vegetarian I ALWAYS get a purely veg pizza!

    We are not vegetarian either but I love the idea of cutting down on our meat. Those baked eggs sounds amazing and I also love sweet potato so would happily make swaps and give some of these a try.

    It is always nice to mix things up a little. I am vegan, but can easily adapt some of these fab looking dishes xx
